So, today was horrible!!! Plyometrics is not an easy workout! I was actually dreading it when I woke up this morning. Just like last week, I had to take a few more breaks than the workout calls for. My calf muscles were on fire and my lungs were too. This is just really tough. For those out there doing this program, if Plyo is too hard for you, you can always do Cardio X instead. I think I will stick it out with Plyo X just to be a hard ass!
My diet is the same. Eating well, not too much, keeping my portions at a good amount. I had a nice strawberry smoothie for breakfast again. I put the recovery drink powder in there too. A friend of mine sent me a recipe for chicken parmesan meatballs! I think I am going to try it! Ground meat is not included on the portions list, but if it’s ground chicken, it can’t be that bad! I’ll choose the lean kind.
I have my video all set, it should be posted tomorrow. I have to warn you, it’s pretty long. But for those who are really interested in the P90X, there is some really great information.

Chicken parmesan meatballs? Sounds amazing, would you mind sharing the recipe?

Sure Andrea! I got the idea from Rachel Rey, but didn’t actually follow her recipe! Hers is probably way better!!
All I did was mix lean ground chicken with an egg, some italian bread crumbs, a little drizzle of red wine vinegar, parmesan cheese, and seasoning. It would probably be awesome with some sauteed onions. I did drip a little EVOO over the meatballs before putting them in the oven just to help them brown. Otherwise they will come out white. Still tasty, but not too pleasing to the eye! I baked them in the oven then added them to my sauce.

We killed it on Plyometrics today…only having minor difficulties with squat jacks and what I call Guitar Rocker. I did as many as I could and continued to move. By the end of it, I looked at the hubby and said ‘we stink!’
